Especially for Brent : Corsican cheesecake
Fiadone1 brocciu (or 500 g ricotta cheese)
4 eggs
1 lemon peel grated
150 g (2/3 of a cup) sugar
Crush brocciu, mix thoroughly all ingredients.
Cover the pan with foil or parchment. Then butter it.
Bake in hot oven (180 ° C, 400°F), until top is golden brown (about 40 min).
RMK:
The mold should not be too big so the dough is about 1 inch thick.
The fiadone should be golden brown, but still moist inside.
